Garlic Butter Shrimp Zoodles

Ingredients

  • 1 lb shrimp, peeled

  • 3 whole zucchini, spiralised

  • 4 garlic cloves, minced

  • 1 tbsp butter

  • 1 tbsp olive oil

  • ½ tsp chilli flakes

  • 1 whole lemon

  • 3 tbsp fresh parsley

  • 1 pinch sea salt and cracked black pepper

Method

  1. Pat the shrimp dry and season with sea salt and cracked black pepper. (cut off, confirm ending)

  2. Sear them in the olive oil for 90 seconds a side, then remove. (cut off, confirm ending)

  3. Melt the butter with the garlic and chilli flakes for 30 seconds (confirm time), then add the zucchini noodles and toss for 2 minutes.

  4. Return the shrimp, finish with lemon juice and parsley, and serve right away. (cut off, confirm ending)


Swaps & Substitutions

  • Use olive oil only for a dairy-free pan.

  • Chicken strips or scallops work instead of shrimp.

  • Swap half the zoodles for cooked pasta if you want more (cut off, confirm ending).


Coach Tip

  • Do not salt the zucchini early or it will weep.


Storage & Reheating: Best fresh, keeps 1 day chilled. Reheat quickly in a hot pan, zoodles soften fast.
